#BodyPositive 2016 – Chicken, abalone and mushroom stew

Chinese New Year is my favourite festival and holiday, more so than Christmas!  It’s this time of the year that relatives gather to feast and make merry : )  It’s also the time that businesses in this region make the most money.  After all, everybody needs to shop for tons of groceries to feed visiting guests!

My man and I had some cans of abalone.  After eating 1 on its own, chilled (yum!), we decided to open another for cooking.  I was making a Chinese chicken stew that evening and thought it would make the gravy tastier.  The recipe is very similar to the sesame oil chicken : )


Abalone, thickly sliced, reserve the abalone liquid

Chicken thighs, cut into chunks

Sliced shiitake mushrooms

Chopped garlic

Crushed chilli flakes

Crushed garlic

Oyster sauce

Light soy sauce

Sesame oil

Chinese rice wine


Melt butter at medium heat in a skillet and mix in sesame oil.  Fry the chopped garlic for about 1 to 2 minutes, then brown the chicken for about 3 to 5 minutes.  Reduce the heat setting to low, add the mushrooms, abalone liquid to your liking, chilli flakes, oyster sauce, soy sauce and sesame oil, then cover and cook for another 20 minutes.

Stir in the abalone slices.  If need be, add more abalone liquid, oyster and soy sauce and sesame oil for flavour.  Cover and cook for another 3 minutes, then add a dash of Chinese rice wine, bring to a boil and serve immediately.


The gravy is super good spooned over rice! 😀
