#BodyLove 2016 – smoked salmon, mushroom and cream cheese scramble with truffle oil

So far, I’ve shown you that eating healthy doesn’t mean you need to deprive yourself of delicious treats.  Fresh food is not only beneficial to our systems, it’s also very tasty!  So here’s a breakfast which you can whip up easily.  No more excuses that you don’t have time to cook!

You’ll need:

A small pack of smoked salmon, each slice cut in half

A tablespoonful of cream cheese

Diced shiitake mushrooms

3 eggs, lightly beaten with light soy sauce

Mixed herbs (optional)

Black pepper (optional)

Cooking sherry

Truffle oil

Method

Melt butter in a skillet at medium heat and fry the diced mushrooms for a few minutes.  Sprinkle mixed herbs, black pepper and add the cream cheese and 2 capfuls of cooking sherry.  Stir till the cheese melts and mix thoroughly.

Turn the heat to low and pour in the eggs, lightly stirring while they set.  Once the eggs are 3/4 cooked, turn off the heat but let don’t take the skillet off the stove.  Quickly mix in the smoked salmon and the mixture onto a serving plate.

Drizzle with truffle oil before eating.
