Body Positive – Healthy version of spam loco moco

Loco moco is a dish I ate often when in Hawaii.  It’s the ultimate comfort food!!!  Returning to Singapore meant I no longer could indulge in it.  The good news is, The Rocking Diner at 11 Tras Street sells a pretty authentic version of it because the manager lived there for years too! 😀

Here’s what spam loco moco looks like.

So it’s rice and spam topped with sunny side up eggs and tons of brown gravy.  I decided to make a healthier version of it with potatoes and veggies instead : )

Melt a cube of butter over medium heat and fry the potatoes and carrots for 3 to 5 minutes.  Reduce the heat, sprinkle with mixed herbs and black pepper, add a little milk and a dash of soy sauce, cover and cook for about 20 minutes.  Stir the veggies every 10 minutes so that they are evenly cooked.

Add the broccoli florets, cover and continue to cook for 10 minutes or until your desired tenderness.  Turn off heat, scoop onto a plate.

Discard the oil and melt another cube of butter on medium heat.  Fry the spam slices, 3 to 5 minutes on each side till gorgeously browned and crisp.  Spoon onto the veggies.  In a small skillet, melt a cube of butter at high heat and fry 2 eggs sunny side up.  Keep the yolks runny.  Spoon on top of the spam.

Lastly, dissolve brown gravy in hot water and stir till it’s the consistency you want.  Heat up the skillet with the remaining grease, mix in the gravy and add a dash of sherry and mixed herbs.  Once it starts to boil, turn off the heat, pour the gorgeous gravy on the dish and….
