Sambal scallops and eggplant

My man likes spicy food.  As a matter of fact, so do I.  There’re so many things he does right, thus, apart from the fact that he’s a dude and loses fat easily when exercising, the food he eats tends to speed up his metabolism.  Chillis are known to fire up the body to burn, burn and burn those calories!

This is a dish we love, so I hope you’ll enjoy it too!  Melt some butter in a wok, fry dried shrimp (you can get them at Asian marts) and white bait till crisp.  Add scallops and eggplant and a little stock.  For the seasoning, use soy sauce, sambal and Chinese rice wine.  When the eggplant is soft and the scallops are cooked, turn off heat and serve immediately.
